I’m blocking ads on iOS with Safari. Granted it’s not baked in to the browser but I have AdGuard installed and that does a good job of suppressing YouTube ads.
I also connect back to my server at home via VPN no matter where I am and run PiHole for DNS resolution on that
Simple to use and when I’ve had an issue in the past the developer was responsive and pushed a change out to GitHub within an hour
I use Gonic, does exactly what I need. It’s in a docker container and hasn’t let me down in over a year.

I’ve been on Jellyfin for years, and I was using Emby before they forked it to create Jellyfin. Prior to Emby I was on Plex.
It hasn’t always been smooth sailing but I’ve been using it in a docker container for about a year now and it’s been great. The family love it, which is the main thing.
My AdGuard is working well against YouTube, and I back it up with PiHole as well
